INGREDIENTS

BONELESS FISH STEAK, MINCED
  1/2 K G.
WINGED BEANS OR FRENCH BEANS, FINELY CHOPPED
  1/4 K G.
EGG, BEATEN
  1
CHOPPED SHALLOTS
  1/4 CUP
 CHOPPED GARLIC
  1/4 CUP
 COCK LEMON GRASS (CHOPPED)
  1/4 CUP
CHOPPED CORIANDER ROOT
  1/2 TBSP.
 CHOPPED GALANGA ROOT
  1 TBSP.
CHOPPED KRACHAI ROOT
  1/2 TBSP.
 COCK PEPPERCORNS
  1/2 TSP.
 GRATED KAFFIR-LIME RIND
  1/2 TSP.
 COCK SHRIMP PASTE
  1 TBSP.
 DRIED CHILLIES
  5-10
SALT
  1/2 TBSP.
 
     
 
PREPARATION
1. Pound or grind these things together: shallots, garlic, lemon grass, coriander root, galanga root, krachai root, peppercorns, grated kaffir-lime rind, shredded dried chillies, salt, and shrimp paste to a fine paste.

2. Put the minced fish in an electric blender, and blend in the curry mixture.

3. Add the beaten egg. Pour the curried fish mixture into a large bowl.

4. Mix in the chopped beans. Make flat, round fish cakes, about 1 spoonful in large.

5. Heat the oil in a frying pan, and deep-fry the fish cakes until golden brown. Serve with cucumber dressing.
