THAI FOOD PRODUCTS
 

  In the past, the land of northern Thai was an area of Lanna which has the eating tradition, 'Khuntoke'. People sit on straw mats around a small oak table and share their special dishes together.
 


 

In the cooler temperature, Northern people use little more fat in foods than other region. They love sticky rice, chili pastes and curries. Northern foods are not so sweet, rather salty. Famous Northern foods are;-

Num Phrik Ong (minced pork chili paste)
Num Phrik Noom (eggplant chili paste)
Gaeng Kae (flower curry)
Gaeng Aum (pork entrails curry)
Moo Yor and Naem (minced pork sausage) Khao Soi (noodles in spicy soup)

 

The renown of Southern foods are their hot and spicy taste. The region is plenty of fresh seafood, which are their main ingredients. Southern people love curries and fishes. In the humid climate of peninsula, the heat in the food helps to protect them from fever.
 

 

Famous Southern hot curries and soups are:

Gaeng Tai Pla (salty fish viscera curry)
Gaeng Som (hot and sour vegetable soup with fish)
Gaeng Lueng (spicy coconut shoot soup).

Southern foods look more yellowish, because they extensively use tumeric and curry powder, for examples:

Khao Mok Gai (rice with fried chicken, added tumeric)
Poo Phad Phong Garee (fried crab, added curry powder)

A famous kind of Southern sauce, Boo Doo, is for eating with vegetables and making Khao Yum (rice mixed with Boo Doo). Twisted cluster beans (Sator) are plenty in the region and they are local foods that can be cooked with curries, coconut soup or fried with meat.
