THAI FOOD PRODUCTS
 

Central Thai foods have charm of some spicyness and great aroma from herbs and spicy, such as kaffir lime leaves, lemongrass. The area is famous in chili pastes that have the charming style of blending and cooking in the mortar and pestle, the simply style of preparation.
 

People usually use local ingredients from their seasons or from the hedgerows and fences. Central foods are not so spicy, but mellower and sweeter. People eat steamed rice with dishes of chili pastes, vegetables and meats. Famous Central Foods are:

Num Phrink Platoo (fried fish with chilli paste)
Yum (spicy salad)
Phanaeng (dried curry)
Mussaman (curry)
Som Tum (spicy salad)
Geang Jued (clear soup with vegetables and meats)

Som Tam in Central area is not so spicy and no Plara. They usually added ground peanuts for crunchy texture. The region is also famous in many kinds of desserts that mostly made from flour, coconut and sugar, such as, Piak Poon, Sod Sai, and so on.

 
 

Northeastern foods are also spicy and hot. Northeasterners have their eating tradition which is called 'Pha Khao Laeng'. People sit around a bamboo or rattan table and share their meal as friends.
 

People like to eat sticky rice in Kratip (bamboo basket). They roll of rice gently in fingers and eat with spicy salads, grilled meat and soup. The region is very famous in spicy salads, for examples:

Som Tum (the most well-known spicy green papaya salad)
Pla Kung (spicy prawn salad)
Larb (spicy meat salad)

In cooking, they use tamarind juice, olive or red ant's egg for the sour taste. And they have Plara, a special fermented fish paste that has salty taste and strong fishy smell. It is used for seasoning while cooking or making sauce for grilled meat (Jaew).

For tourists, Moo Yong (processed pork ribbons) and Moo Paen (processed pork slices) are also famous foods to buy in the region.
